Walnut Apple Salad

Ingredients
- 6-8 Handfuls of Baby Greens
- 2 apples, diced
- ¼ red onion, diced
- 1 carrot, shredded
- ½ cup blue, gorgonzola, or goat cheese
- 1/4th cup walnuts, toasted
For the dressing:
- 1 tbsp walnut oil*
- 1 tbsp olive oil
- 3 tbsp lemon juice*
- 2 tbsp fresh orange juice
- 1 tbsp honey
- 2 tsp Dijon mustard
- CARBOHYDRATE COUNT: 14g
Directions
Prepare ingredients.
Whisk dressing together and toss with salad right before serving.
Makes 8 servings.
*If you don’t have walnut oil, you can use olive oil
*If you don’t have lemon juice, you can use apple cider vinegar
