Ingredients

  • 6-8 Handfuls of Baby Greens
  • 2 apples, diced
  • ¼ red onion, diced
  • 1 carrot, shredded
  • ½ cup blue, gorgonzola, or goat cheese
  • 1/4th cup walnuts, toasted

For the dressing:

  • 1 tbsp walnut oil*
  • 1 tbsp olive oil
  • 3 tbsp lemon juice*
  • 2 tbsp fresh orange juice
  • 1 tbsp honey
  • 2 tsp Dijon mustard
  • CARBOHYDRATE COUNT: 14g

Directions

Prepare ingredients.

Whisk dressing together and toss with salad right before serving.

Makes 8 servings.

*If you don’t have walnut oil, you can use olive oil

*If you don’t have lemon juice, you can use apple cider vinegar
