Tuna Pasta Salad

Ingredients
- 2 cups uncooked quinoa or whole grain pasta
- 2 stalks celery, diced
- 2 carrots, chopped
- ½ red bell pepper, diced
- ¼ onion, diced
- ¼ cup green olives, halved (optional)
- 11 oz fresh tuna, pouch or can in water
- ¼ cup fat-free plain Greek yogurt
- 3 tbsp light mayonnaise
- ¼ tsp black pepper
- CARBOHYDRATE COUNT: 31g
- Serving size = 1 ½ cups, makes 4 servings
Directions
- Cook pasta according to package directions. Drain pasta and rinse under cold water.
- In a medium bowl, combine remaining ingredients, Add pasta and toss to coat. Serve cold.
