Ingredients

  • 2 cups uncooked quinoa or whole grain pasta
  • 2 stalks celery, diced
  • 2 carrots, chopped
  • ½ red bell pepper, diced
  • ¼ onion, diced
  • ¼ cup green olives, halved (optional)
  • 11 oz fresh tuna, pouch or can in water
  • ¼ cup fat-free plain Greek yogurt
  • 3 tbsp light mayonnaise
  • ¼ tsp black pepper
  • CARBOHYDRATE COUNT: 31g
  • Serving size = 1 ½ cups, makes 4 servings

Directions

  • Cook pasta according to package directions. Drain pasta and rinse under cold water.
  • In a medium bowl, combine remaining ingredients, Add pasta and toss to coat. Serve cold.
