Ingredients

  • 4 salmon fillets
  • Juice of 2 lemons
  • 1 lemon thinly sliced
  • 1 tbsp olive oil
  • 3 tbsp dijon mustard
  • 4 sprigs of dill (or 1 tsp dried)
  • 4 tbsp capers (optional)
  • CARBOHYDRATE COUNT: 12g

Directions

  • Preheat oven to 350 degrees. Place salmon fillets skin side down in baking dish 
  • Squeeze juice of two lemons over salmon 3. Spread or drizzle olive oil over salmon
  • Spread mustard over salmon.
  • Layer dill sprigs (or spread dried thyme), lemon slices, and capers (optional).
  • Bake for 35-45 minutes.
