Mustard Salmon

Ingredients
- 4 salmon fillets
- Juice of 2 lemons
- 1 lemon thinly sliced
- 1 tbsp olive oil
- 3 tbsp dijon mustard
- 4 sprigs of dill (or 1 tsp dried)
- 4 tbsp capers (optional)
- CARBOHYDRATE COUNT: 12g
Directions
- Preheat oven to 350 degrees. Place salmon fillets skin side down in baking dish
- Squeeze juice of two lemons over salmon 3. Spread or drizzle olive oil over salmon
- Spread mustard over salmon.
- Layer dill sprigs (or spread dried thyme), lemon slices, and capers (optional).
- Bake for 35-45 minutes.
