Ingredients

  • 2 cups Spinach
  • 2 Cups Romaine
  • ½ green bell pepper, diced
  • 1-2 cucumbers, sliced
  • 1/3 cup Greek or Kalamata Olives
  • 2-3 tomatoes, diced
  • ¾ cup Feta Cheese
  • ½ cup Banana peppers
  • ¼ red onion, diced

For the dressing:

  • 2 Tbsp olive oil
  • 2 Tbsp white wine vinegar
  • ½ Tbsp Dijon mustard
  • 1 Tbsp Italian dried herbs
  • CARBOHYDRATE COUNT: 9.5g

Directions

Prepare ingredients. Whisk dressing together and toss with salad right before serving. Makes 4 servings.
