Ingredients

  • 2 can No salt added diced tomatoes (14 oz with juice)
  • 1 large onion (diced)
  • 4 clove garlic (minced)
  • 2 large carrots (diced)
  • 2 stalks celery (diced)
  • 1 medium parsnip (diced)
  • 1 large red bell pepper (seeded and diced)
  • 6 cup low sodium vegetable broth
  • 3 cups of chopped cabbage
  • spike seasoning (salt-free)
  • 1/2 teaspoon of salt (optional)
  • 1/4 teaspoon of black pepper
  • 1 large, sweet potato (about 10 ounces peeled and diced)
  • 6 Servings

Directions

  1. Stir together all ingredients in a crock pot
  2. Set the crock pot on high setting for 4-6 hours
  3. Stir well before serving and lightly mash the parsnips and sweet potatoes to thicken the soup slightly
