Cilantro Cobb Salad

Ingredients

  • 4 cups Romaine lettuce
  • 1-2 cobs corn, roasted
  • 1 cucumber, cut into quarters and sliced
  • 1 avocado, diced
  • 2 tomatoes, diced
  • ½ cup black beans
  • 1/3 cup sunflower seeds

For the dressing:

  • ½ cup mayonnaise
  • ½ cup buttermilk
  • 1/3 cup cilantro
  • 1/3 cup scallions
  • 1 jalapeno, diced
  • 2 limes (zest of one and juice of both)
  • Salt and pepper to taste

Directions

  1. To make the dressing, put all ingredients in a food processor and blend.
  2. Prepare salad ingredients. Toss ingredients with Jalapeno Ranch.
