Cilantro Cobb Salad

Ingredients
- 4 cups Romaine lettuce
- 1-2 cobs corn, roasted
- 1 cucumber, cut into quarters and sliced
- 1 avocado, diced
- 2 tomatoes, diced
- ½ cup black beans
- 1/3 cup sunflower seeds
For the dressing:
- ½ cup mayonnaise
- ½ cup buttermilk
- 1/3 cup cilantro
- 1/3 cup scallions
- 1 jalapeno, diced
- 2 limes (zest of one and juice of both)
- Salt and pepper to taste
Directions
- To make the dressing, put all ingredients in a food processor and blend.
- Prepare salad ingredients. Toss ingredients with Jalapeno Ranch.
