Ingredients

  • 6 oz arugula
  • 1 pear
  • ¼ cup walnuts
  • ½ oz pecorino romano cheese
  • For the dressing:
  • 2 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • ½ tsp black pepper
  • Serving size = 1/6 of the recipe, 105
  • CARBOHYDRATE COUNT: 7g

Directions

  1. Place the arugula in a large salad bowl. Spice the pear as thinly as possible and place on top of the arugula. Sprinkle with walnut halves. Using a vegetable peeler, shave ½ oz of the Pecorino over the salad.
  2. Sprinkle balsamic vinegar over the salad. Sprinkle extra virgin olive oil over the salad. Add pepper. Toss well and serve.
