Arugula Pear Salad

Ingredients
- 6 oz arugula
- 1 pear
- ¼ cup walnuts
- ½ oz pecorino romano cheese
- For the dressing:
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- ½ tsp black pepper
- Serving size = 1/6 of the recipe, 105
- CARBOHYDRATE COUNT: 7g
Directions
- Place the arugula in a large salad bowl. Spice the pear as thinly as possible and place on top of the arugula. Sprinkle with walnut halves. Using a vegetable peeler, shave ½ oz of the Pecorino over the salad.
- Sprinkle balsamic vinegar over the salad. Sprinkle extra virgin olive oil over the salad. Add pepper. Toss well and serve.
